Christmas Spirit

I am going to be completely honest here, the last few days have been absolutely terrible for me.  I have felt so down in the dumps and wasn't sure how to get out of it.  I soon realized I was having a hard time with it being the holiday season and yet have it not feel like it.  We get so busy with the hustle and bustle of life as we grow older, I feel like the feeling of Christmas can be gone.  I wasn't sure how to get the feeling of Christmas into my home and my life.

I came to a wonderful realization that I first needed the spirit of Christmas to have the feeling of Christmas.  I watched my recorded Presidency Christmas Devotional that was on last night.  I immediately began feeling more excited for Christmas.  If you have not watched this yet, I highly recommend it.

After I began talking with some family and friends and knew I needed to do.  I created a holiday season bucket list for me and my husband, Tyler.  At first it was hard to think of ideas, but after a while I came of with 24.  I am so excited to begin this and have the feeling and spirit of Christmas in my life, marriage, and home.

Make Snowflakes - there are some great websites with tutorials.
Go on night drive to see Christmas lights - with Christmas music blasting of course.
Make gingerbread houses - make a party or contest out of it.
Christmas movie night - this one will be repeated.
Decorate Christmas sugar cookies - deliver them to a neighbor or someone in need.
Visit the living nativity scene - I hear there is one in Alpine, I need to look more into it.
Make Christmas Candy - caramels, toffee, divinity, candy canes.
Read favorite Christmas books and stories - I believe in Santa Claus is my favorite.
Have a sleepover under the Christmas tree - you could even make a fort around the tree.
Give a “secret” gift to someone - secret, very secret.
“Elf” some neighbors - don't know what this is? Check out this website
Go see Santa Claus - You are never too old to sit on Santa's lap.
Go to the Zoo lights - Ever been? It is so great.
Elf scavenger hunt at Gardner Village - It is free, and you could get some shopping done.
Christmas Cruise at the Provo River - I heard this is really fun, dress warm!
 SLEDDING - PLEASE SNOW
Make homemade hot chocolate - maybe homemade marshmallows too?
Make a snowman - PLEASE SNOW
Put together Disney puzzle - I love puzzles around the holidays.
Have a fancy candlelight dinner - Why not do it on the longest night of the year?
Make homemade ornaments - make memories, and remember them.
Make “Grinch punch” and “snowman pizza” - great fun recipes on pinterest.
Color Christmas pictures - Free printables everywhere!
Snowball fight - again, PLEASE SNOW

This is our holiday bucket list, and there are so many more things you could do.  We didn't choose to include some, just because it will happen.  We of course read the story of Christmas out of the scriptures. Act out the nativity scene.  Wrap presents.  Go to Christmas parties.  Do whatever will help you feel the spirit of Christmas.  Of course keep Christ your focus, and the spirit of Christmas will follow.

Playing catch up

Oh how it has been forever since I have blogged.  Im officially a blogging failure, I just never now what to talk about.  Our lives our pretty ordinary with working and going to school, nothing too exciting happens.  However, I would like to introduce the two newest (now not so new) members of our Gogan family.  Firstly here is our little kitten, Baloo.

He enjoys sleeping on our laundry

His newest target of interest is the toilet

We won't mention how many times he has fallen in....
He will snuggle with the puppy, only if she is sleeping though.

Since I got a kitten, Tyler needed his puppy.  Before we knew it, we had a puppy. This is our sweet little puppy Daisy, except she's not so little and not so sweet anymore.  She is bigger and gets into EVERYTHING she shouldn't.  It is almost like she has a radar for knowing what she is not supposed to get into.

She had the cutest blue eyes when we first got her, know they are a hazel.

She has found her love for people food, and will go at all costs to get some.  She is super good at the begging puppy face.

Homemade Carmel's

So I am taking a break from my much failed thirty day challenge and sharing with you one of my most favorite beloved recipe.  My Grandma's famous carmel recipe.  These things are amazing and always remind me of the holidays.  There were always plates of them everywhere to have at all the family gatherings.  My Grandma started getting older and was fighting cancer.  She has successfully gone through her cancer treatments and is doing much better, but still not up to par.  This last holiday season she was unable to make these beloved family treat, with this my aunts stepped in and after trial and error succeeded in creating this recipe.  Now I have learned how to make them, and for whatever reason had an extreme craving for them in the middle of August.  Now the recipe my grandma has is very vague and if I were to just write it down you might figure it out, but it would involve high stress and confusion.

Now what you will need is

+2 and 1/2 cups of white sugar
+2 cups of white caro syrup
+3 cups of heavy cream
+1/2 cups of sweetened condensed milk
+1/4 teaspoon of salt
+1 teaspoon of vanilla
+candy thermometer
+jelly roll pan

First get a large (get a big pot, it is better to have too big of a pan then have the carmel's start to boil all over your stove.) heavy duty pan.  The more thick and heavy the pan is the less likely your carmel's will burn on the bottom. (but that has to do with the heat as well) Add in your caro syrup and white sugar. It should look something like this:

Now turn it on to about medium to medium high heat.  You are wanting to get this baby to boil on the lowest heat possible, I usually have mine on about medium heat.  You want to stir it occasionally to get the sugar and caro syrup to incorporate, but do not stir it too much.

Now that your caro syrup and sugar mixture is boiling set your timer for ten minutes.  Stirring this mixture occasionally.  While your mixture is boiling take small sauce pan add your cream, sweetened condensed milk, and salt.  Once all the ingredients are in the pan you want to heat it up, but whatever you do, do not let it boil.  You are going to be adding this into the caro syrup and sugar mixture and you want it to be hot when you add it.  It should look something like this:

Now once your cream mixture is hot and your caro syrup and sugar mixture has been boiling for 10 minutes you are going to add the two together.  Take your small sauce pan with the cream mixture and very slowly start pouring a little stream into the caro syrup and sugar mixture.  While pouring make sure you are stirring constantly.  The goal to pouring slow and stirring is YOU WANT TO KEEP THE MIXTURE BOILING.  Make sure your heat is high enough and you are pouring slow enough to keep the boil.

Now once you have skillfully kept your mixture boiling and all the cream is added pop your candy thermometer into the pan.  I have one with a clip so I just clip it to the side of the pan.  Now is the hardest part.  Being extremely patient.  Again you want this mixture to be always boiling, but on the lowest heat you can.  And whatever you do, DO NOT STIR IT.  I know it is SO tempting but do not stir the mixture.

Now it should slowly but surely start rising in temperature and darkening in color.

Notice the color darkening

And sometimes after 10 minutes it doesn't seem to darken all that much, but do not doubt, and most importantly do not be tempted to turn up the heat or stir them.  Now you need to baby them because they sometimes like to boil more than you think, so if you leave the kitchen, you have a good possibility coming back with it boiling over.

They keep darkening in color and rising in temperature.

Now you know they are getting close when the color starts looking like this, and the boil looks a little different.  The most important part is taking them off on the right temperature.  You are probably wondering why I haven't told you the temperature.  It really depends on how chewy or hard you like your carmel's.  Now I personally like them chewy, but on the softer side.  I usually cook mine to about

+234 to 240 degrees F which is the soft-ball stage.

or if you want them not as soft, but still chewy you can cook them to about

+244 to 248 degrees F is the firm-ball stage.

or if you want them more hard you can cook them to about

+250 to 266 degrees F is the hard-ball stage.

It honestly all depends on your preference.  I prefer the soft-ball stage.  A good way to gauge the texture is once it reaches a temperature get a nice big glass of ICE COLD WATER.  Make sure it is ICE COLD.  Then stick the tip of a spoon in the boiling mixture and let the mixture drip it into the water.  It should immediately set up, you can then eat it or feel it to see how done it is.

Now the last little part of the temperature rising always seems to take the longest.  Again do not give into the temptation to stir it or turn up the heat.

Now my temperature was about 230 in this picture.  I only needed it to go about 5 more degrees.  Unfortunately I am a slacker and did not get the picture of it at is final temperature, because it went faster than I expected and didn't want it to get too done.

Now somewhere in all the watching the carmel you need to get a jelly roll pan and butter it.  Do it way before your carmel's will be ready. Don't over butter it, but butter it enough that your carmel's will not stick to the pan, and causing a big sticky mess.  If you are wanting nuts in your carmel's or half nuts half plain sprinkle them on the pan now.

Once your desired temperature is reached take the carmel's off the heat.  Add your vanilla.  I repeat add your vanilla.  This is a step often forgotten due to the pure excitement that this long process is almost over and you want your carmel's.  Don't get too excited that your forget your vanilla, they will still taste pretty darn good, but I promise you need to vanilla.  (And yes, I have forgotten before) Stir in the vanilla, then pour onto your pan.

Now the waiting game.  You have to wait for these bad boys to set and cool.  That is why it is super nice making them in the winter, I just take them outside on the porch.  It may seem forever, but I promise they will cool and set.  Once they do then you can cut them and eat them.

Enjoy!!

Day 6: Pet peeves

Wow I am sure I have a lot of these.  So I might just sound like a jerk in this post, or not.

+ When the toothpaste lid does not get put back on the toothpaste.  Why would you do such a thing?  It gets messy and hardens and then you get hard toothpaste in your mouth.  PUT THE LID ON THE TOOTHPASTE.

+ If you are at a movie watch it.  If you have an important comment whisper it.  If you are wanting to have a conversation through the WHOLE MOVIE go somewhere else. Or else consequences might include having popcorn thrown at you, being called a stupid moron, or being told to SHUT UP.

+ There is a sign on the freeway that states: slower drivers keep right.  Therefore, if you are going to go under the speed limit get out of the right lane.  Also, the right lane is the "fast lane" so go at least 5 over the speed limit.  And do not go in the "fast lane" just so you don't have to be behind someone, even though you are not going faster than them.

+ I am aware you are smart and intelligent.  However, if you are constantly correcting me on my grammer I will get a strong urge to punch you.  I know I have pretty good grammer, is it all exactly perfect and correct, no.  AND do not state "I know" to everything I say, like you had any idea what I was going to say.  Gosh you were the annoying kid in school who always raised their hand and gave long boring drawn out comments in every class.

Day 5: What song inspires you.

Oh gosh.  I am not good at this.  I go through phases in what songs I love.  I am not sure if I can think of a song that I automatically think of as inspiring.  I can think of many songs that I hold close to my heart, but none that I think of as inspiring.

four.

Unfortunately I feel behind, dang you weekends.  So fromt his point forward weekends will not count, this way I will be less likely to fall behind.

Day 4: Your parents.

These are my amazing parents.  Without them I would not be the person I am today.  They have always supported me in anyway possible.  They have given me such a great example of love.  I could not ask for more loving, supportive, kind parents.  Our family has been through a lot, and they have helped our family through it all.

My dad is the hardest worker I have ever met.  He works so hard for our family so that we can have extra things in our lives.  Some of my fondest memories of my childhood include him being the best dad ever.

My mom is one of the smartest people I know.  She has her Ph.D. in Psychology and just finished receiving her Masters in Marriage and Family Therapy.  She works so hard in becoming a therapist while being an amazing mom.  Everyone who has ever met her, loves her.

Most of all my parents have raised amazing children.  I wouldn't be who I was today without them.  I couldn't imagine my life without either of them.  I have such a powerful and strong relationship with them, I also consider them as some of my closes friends.  I love you mom and dad!  You both are amazing!

Day 3: Your first love.

Oh goodness this is sure an easy one.  As I have mentioned in an earlier post, I have only been in love once and luckily for me it was with my husband, Tyler.  I wasn't too big on dating while in high school.  Unfortunately, after dating stupid arrogant guys after stupid arrogant guys I thought of high school boys as scum.  It sucks that dating a few dumb boys can ruin my opinion for two years in high school.  Have I had a heartbreak?  Yes, but all in all it didn't last long because I wasn't IN LOVE.  I am completely head over heals with all my heart in love with my amazing husband Tyler.  He truly has changed my opinion on men, obviously. I am so glad I was given the experience to meet him and date him and learn what a true respectful gentleman really is. I loved dating him and I even love being married to him more.

Day 2: Nicknames

Oh my Nicknames.  My name is Jennifer.  The obvious nicknames would be Jenn.  I have never or will never go by Jenny.  Nothing against the name, I am just not a Jenny.  Of course you will hear most people call me Jenn.  It has a lot less syllables than Jennifer.  In soccer my team would call me Jennifire, when I was playing really well.  However, I do have a nickname that is kind of crazy, but has stuck with me somehow.  Even though it is strange and weird, I love it.  It is probably because it takes me back to childhood memories.  The nickname is Ferfer, with different varieties such as ferfy and ferf.  I know I know, weird.  I really do love it.   Now how did this name start?  The answer is I am not quite sure.  We had some close family friends and somehow their family and my family came up with it.  In fact,  this certain family called me Ferfer all the time there was a time when their mom referred to me as Jennifer and they had no idea who I was.  When their mom told them, "Uhh its Ferf"  they couldn't believe Ferfer wasn't my real name.  Hence then it stuck, and now all my extended family now calls me this.  And for the record I really do love it.  :)

Day 1: Introduce, recent picture of yourself, 15 interesting facts.

My recent picture, is not so recent.  Unfortunately I am a terrible picture taker, very terrible.  The only pictures I have that are recent are like blurs of me or so far away that you can not even tell it is me.  HA. I also wanted a picture of me with my wonderful husband, so enjoy an older photo of me, and my husband.

1. I have an undying utter love for Soccer.  It brings me such happiness and joy. The only thing I love more than watching soccer, is playing soccer.  I currently just finished coaching my first team.

2. I am currently in the process of attaining my Bachelors in Psychology at Argosy University.  With the hopes of one receiving my Masters in Marriage and Family Therapy.  I want to become a children's therapist.

3. I have a perfect driving recored...... surprising for some I am sure.  But, the two times I have gotten pulled over I never received a ticket.  :) Yep perfect driving record.

4. I have only been in love once, and still am with my amazing husband, Tyler.

5. I LOVE, LOVE, LOVE cooking.  If I had it my way, I would spend all the money and buying extreme and great ingredients and create amazing food.

6. Currently, I am obsessed with Friends.  The best part of watching is watching my husband watch it, and listening to him laugh uncontrollably.  And if you have heard Tyler's laugh you know what I am talking about.  One day I will post him laughing. Promise.  I will always be watching some T.V. series. ALWAYS. Oh and I love Joey the most.

7.  My husband and I love Disneyland.  We have gone ever single year since we have been dating.  We act like we are seven when we go.  It is so insanely fun.  I am sure parents tell their children not to come by us, haha.  We are so awesome.  We went there on our Honeymoon :)

8.  I have a secret ability at video games, let me clarify.  I have a secret extreme ability at Mario video games.  Mario cart, super mario bros, mario cart, mario party,  all of them I will kick some serious butt. Me and Mario are one. Don't doubt my ability or I will show you and hurt your pride.

9. I have only broken one bone.  It was my ankle.  I also wish I had a cool story on how it happened.  Unfortunately it happened by the dumb winter.  I slipped on ice. Of course with lots of laughing, then the pain hit and the crying and swearing began. Breaking bones SUCK.

Notice the extreme swollen abnormality in the right ankle.
And my foot is swollen.
10.  With the previous post, I have a love hate relationship with Winter and Summer.  I absolutely love Fall and Spring.  LOVE them.  I always get so excited for winter and summer, but then when they get here the extreme temperatures is well, HELL.

11.  I kick serious butt at paint balling.  Serious.  I also get my butt seriously kicked.  Observe the next photo.

12. My absolute favorite dessert in the whole world is the amazing Creme Brûlée.  If I could afford to eat one everyday I probably would, but then it wouldn't be so special.  I am salivating thinking of one.  The best place to get one is the Harvest restaurant at Thanksgiving Point in Utah.

13.  If I could love a fictional character it would have to be spiderman.  I love spiderman.  Especially with the new movie.  He is just so hott.

14. I am the oldest child.  I have 3 younger sisters, and a younger brother, Tanner, that passed away 7 years ago when he was one years old.  I miss him everyday, and always have him in my heart.  It was an amazing experience and through all the grief and heartache it made me who I am today.

15.   My husband is the most incredible man I know.  I know I am extremely biased but he is.  I have never met someone who has been through what he has and has excelled to where he is now.  He is the hardest working man.  Tyler has the purest intentions, he always means good.  He puts up with me when I am grumpy, and loves me unconditionally.  He makes me happier than I can imagine and I have had some of my happiest memories with him.  I couldn't even picture my life with anyone else.  He is perfect.

My husband singing and dancing to Michael Jackson at
our wedding.

My husbands awesome dance moves.  Like father like son.

Monday, July 9, 2012

I know I know, I am really bad at keeping up with this blogging thing.  And now 1 month later I am sharing our one year anniversary day.  Firstly it is so crazy to think we have already been married a whole year!  WOW.  It did not seem that long at all.  We ended up deciding to start our day off early and do a 25 mile bike race, for the tour de cure for diabetes.  It was down in Brigham City.  We had attempted training before, but with our busy schedule we only ended up going 4 times before the race.  We are cool I know.  Surprisingly enough we ended up finishing in about 90 minutes, and that is not too bad for beginners.  It was so great to be able to ride with Tyler and enjoy the outdoors together.  Not to mention burning some calories so we could eat a big dinner.  After the race finished we got our stuff together and went and got massages :)

We drove all the way home to Lehi and by then we were so tired from our early bike ride escapade.  We wanted to go out to dinner, but decided to get some food to go, that way we could be lazy bums in our pajamas.  Not to mention Tyler had a killer sunburn on his legs and did not want to put jeans on.  We ended up getting sushi from Tsunami and Buffalo Wild Wings..... great mix I know.  Sushi is my favorite and wings are Tyler's favorite, compromising is the way to go.

People often say that the first year of marriage is the hardest.  I can definitely see why they would say that.  I have to say that it is the greatest as well.  It is definitely an adjustment living together and getting in the right synchronization of living together.  We grew so much, I look back and can not believe how much we have both grown, and we have grown together.  I love that we work as a team, and that we have learned and are still learning how to do that.  I love that we had some hard times together, it helped me realize how good we are for each other and how we got through tough situations together.  We also shared so many amazing memories.  We had so many fun times together, and I am pretty sure I have laughed my hardest when I am with Tyler.  I wouldn't want to be with any other person than him.  I love my husband with all my heart and couldn't be happier.  I am looking forward of the years to come and what they shall bring.

Mischief Kitty and baby Tyler

My sweet Kitty of 15 years had to be put down on Thursday.  He had some sort of heart and lung failure that was leading to his chest cavity to slowly fill with fluid.  I never would have known how much love and grief you could feel for a pet.  It was a lot harder than I thought it would be to make that decision.  However, I knew he was in a lot of pain and would most likely die painfully and slowly.  He was the greatest pet anyone could have asked for.  I had so many people they hated cats, but they loved Mischief. He really was something special.  He was constantly purring.  Everyone loved when you would hop up on them and start kneading them with his paws.  He was so tolerant of all kids and truly loved.  This sounds so cheesy but he was there for me, and in that matter everyone else.  Whenever someone was crying he would go find them and want to cuddle with them.  He really was a part of the family.  Now he can be up in heaven with Tanner and Koko.  Thank you Mischief for being such a wonderful gift in my life and all that you gave to me.

This is the cutest way he slept.  He is so precious.

On a more happy note my wonderful mother in law showed me some great pictures of my cute husband Tyler when he was a little boy.  Enjoy.  They are so great.

Look how huge that cat is!

Now I can hold this against him when our boys want to play with "dolls"

Dirt biking love started young

The funny thing is he still eats the same....

What a handsome boy at his sisters wedding.

Look at those cheeks
